Here at IRV we like to ring in the weekend with a delicious cocktail (or two), and although vodka is our main squeeze, we do not have an exclusive relationship.  This weekend, we recommend whipping up a batch of delicious raspberry mojitos, inviting some friends over and enjoying the beautiful weather (click here for Toronto’s forecast if you don’t believe me).

Here is IRV easy-pease recipe:

makes 1 drink in collins glass

  • 10 fresh raspberries
  • 2 wedges of lime
  • 6 mint leaves
  • 2 oz. white rum
  • 1 tbs simple syrup (substitue 1/2 pkg of splenda)
  • Soda water
  • Ice

– Muddle mint, lime, simple syrup and half raspberries

– Add rum

– Add ice, top with remaining raspberries and fill to the top with soda

– If you want to get all fancy, add a sprig of mint for garnish

– Enjoy!
