Who has seen Tom Collins? What started as a practical joke in the 1870s involving spreading rumours about a tricksey character named Tom running around New York pulling pranks, somehow turned into quite the refreshing beverage.  These are really simple to make and are perfect if you are a gin lover, but still need something more interesting than just your average G&T. Since we are not in highschool anymore, gin and lemonade won’t cut it, but follow the recipe below and you will be pleasantly refreshed and on the way to starting a great weekend.

What you need:

–  2 oz gin

– Juice from 1/2 of lemon

– Simple syrup (can you sub Spenda)

– Bitters

– Soda

– In a cocktail shaker mix gin, lemon, syrup, and bitters on ice. Shake and poor into tall collins glass.

– Fill with soda and garnish with a lemon twist.
